Brunch Recipe

This is my favorite egg bake recipe. You can easily alter the "add-in" ingredients based on what you have on hand and I often cut it way down so it's just enough for the three of us. It's very flexible. That said, I love it when it is made with all the veggies!

Eggs Roma

1 lb sausage
12 eggs
1/3 cup milk
1/3 cup sour cream
¼ tsp cayenne pepper
1 tsp. Italian seasoning
salt and pepper to taste
2 cups shredded mozzarella
¼- ½ cup parmesan cheese
Optional veggies: chopped onion, green pepper, diced tomatoes, mushrooms, and olives ( about ¼ cup each or whatever you have on hand)

Preheat oven to 350. Brown sausage with onions, peppers, and mushrooms. Add remaining vegetables when sausage is cooked through. Beat together eggs, milk, sour cream, and seasonings. Put sausage mixture into a greased 9x13 pan. Pour eggs over sausage. Sprinkle with cheeses, and bake for 30 minutes or until center is set.
